Parmesan Halibut Cakes
You get your Home Pack and receive some items that you are not quite sure what to do with. The halibut burger meat is usually one of those items. But really, once you get ideas flowing, there can be a lot ways that it can be used or prepared. From stir fry, to soup, to taco meat, and you could go on . Here, we have made it into a cake and it can either stand on its own or inside a bun.
The combination of flavors from the parmesan, prosciutto, pine nuts and green onions go really well together. If you want to impress family and friends I highly suggest you making this for them.
Ingredients:
- 1/2 cup Mayonnaise
- 3/4 cup shredded Parmesan
- 2-3 cloves garlic
- 1/2 cup panko bread crumbs
- 3 stalks green onions chopped
- 1/4 cup toasted pine nuts
- 1 slice prociutto (pan sautéed to crisp it up)
- 1 lb halibut burger meat
Instructions:
- You will first need to toast the pine nuts. You can wither use butter or olive oil, but you want to get a good browning to enhance the flavor of the pine nuts.
- All you need is one slice of prosciutto. Any more than that will become too over powering for this. you want to sautée it a bit to crisp it up. Just use the same pan you used to roast the pine nut and use the oil left in the pan.
- The prosciutto just needs to be crisped up enough so that you can cut it to bits easily. You don’t want it too much because it will be cooked again. If prosciutto is pretty hard to come by, I suggest you use two strips of bacon as a substitute.
- You want to add and mix all the ingredients except for the halibut.
- When it is mixed thoroughly add in the halibut until it is just mixed. This is so you don’t demolish the halibut.
- You can form them into 6 patties for a good single portion size. Set your oven to broil and put the oven rack on the top most. From there you only need to broil them for 5 minutes and they are done. Patties or meat balls half or 1/3 the size will only need to broil for about 3 minutes.
PARMESAN HALIBUT CAKES
(yields 6 patties)
- 1/2 cup Mayonnaise
- 3/4 cup shredded Parmesan
- 2-3 cloves garlic
- 1/2 cup panko bread crumbs

- 1 lb halibut burger meat
Mix together well all the ingredients, except for the halibut. This will help avoid over-mixing the halibut burger. Blend the halibut burger meat until just combined. Form into cakes or balls. Makes at least 6 cakes. Bake under the broil setting in the oven placed on the highest rack for 5 minutes. You may also pan fry or grill over the BBQ.
